  • We use combinations of honey and water and fruit and herbs and spices to make our products.

  • Our products can be sweet, but just like wine or cider, that are made from sweet grape juice or apple juice our products can be dry and all the way up to really sweet. (Just like wine or cider.)

  • Our brews are quite diverse but the fundamental process is very simple: mix honey and water together to a predetermined ratio of water to honey. That will give us a sweet must that we will ferment to make the alcoholic mead. The different styles of mead will be determined by how much honey is added. More honey means more alcohol and potentially more sweetness. After that different flavours can be added.
